Blogmas Day 2: Gingerbread Oatmeal

Blogmas day 2? I feel like it's time for a recipe.


You all already know my absolute LOVE for oatmeal. It is truly one of God's great gifts to this earth...in my opinion.


I decided to combine two of my favorite things: Oatmeal and Christmas.


That's how I came up with GINGERBREAD. OATMEAL.


There's a lot of modifications that could be made to this recipe...as there is with every oatmeal. Customize it. Make it your own. But HERE is the basic breakdown in recipe form!


 

Gingerbread Oatmeal

Ingredients:

  • 1/2 cup rolled oats

  • 1 cup milk of choice (I used unsweetened vanilla almond milk)

  • 1/2 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp nutmeg

  • 1/8 tsp allspice

  • 1/8 tsp cloves

  • 1 tsp molasses

  • Splash of vanilla extract

  • Pinch of salt

For the toppings (measure them all with your heart):

  • Sliced banana (or other fruit of choice)

  • Chopped pecans (or walnuts...or nut of choice)

  • Crunchy cornflake-vibe cereal of choice (I used special K)

  • Splash of maple syrup

  • Nut butter of choice (EXCEPT REALLY...you should use cookie butter. I didn't have any, so I used peanut butter...but seriously. If you want this to be gingerbread. You know what to do.)

Instructions:


  1. Place medium saucepan on medium heat.

  2. Add almond milk, all spices, molasses, vanilla, and salt to pan. Stir and bring to a boil.

  3. Add oats and cook until desired thickness (if you're like me...make them THICK.)

  4. While oats are cookin away (keep an eye on them and stir on occasion), slice your banana and chop your pecans.

  5. Transfer oats to bowl. Decorate with all toppings. Add some pizazz. Make it your own.

  6. Devour.


I mean....look at her. Look. At. Her.


Fun Facts About This Oatmeal: It's the perfect blend of complex carbohydrates from the oats, healthy fats from the nut butter and nuts, and festive fun w/ the gingerbread vibe. Delicious.

 

And there we have it! Blogmas Day 2.

High of the Day: This oatmeal. Duh.
