Chocolate oatmeal is not the same as chocolate loaf cake

POV: it's Tuesday morning. You're looking in the fridge for any inkling of something that resembles breakfast, when a wave of need washes over you. A wave of need that will ONLY be quenched by the taste of chocolate loaf cake.
I don't know what came over me, but once it popped in my head, I couldn't get it out. I CRAVED it.
And then I realized I had a big problem.
I had no eggs, no oil, nearly NONE of the necessary chocolate loaf cake ingredients. And on top of that, I had no time. I had back to back calls all day long. This meant no time to go to the store, no 55 minutes to bake...so no loaf cake.
So now we move to plan B.
It was breakfast time; I did need to eat SOMETHING. I took the inspo from the loaf cake concept and set out to make the most chocolaty bowl of oats that I could. I added cocoa powder to the base, topped it with chocolate chips, and then used yogurt and peanut butter as my "frosting."
Was this as good as a loaf cake would have been? No. Did it come close? Not really.
BUT. Was it a delicious bowl of oatmeal? Yes!
Sometimes in life, we get unlucky. But we are nothing if not resilient. We carve our own paths, and sometimes...it turns into something pretty good in its own right.
So I present to you: The MOST chocolaty bowl of oatmeal.
Ingredients:
For the oats:
1 part oats, 2 parts milk/water (whatever amount is best for you)
splash of vanilla
pinch of salt
1 Tbsp cocoa powder
2-3 tsp maple syrup
For the toppings (measure with your heart):
Greek yogurt
Peanut Butter
Chocolate Chips
Chia Seeds
How to Make it:
Add oats and liquid to a small pot over medium-low heat. Bring to a simmer, then turn the heat to low and add vanilla, salt, cocoa powder, and maple syrup. Stir to combine and cook until thickened to your liking. Top with toppings of choice and enjoy!
